Update
The lawyer gave me a time window of 2 to 4 months once the papers are submitted .... they will likely call her in for an interview, and also request a medical check....

The alternative was to bring her by way of the US first, and that would of taken 8 months... so we are going to apply at the Canada embassy first, and hopefully it will all work out.

8 Months to the US. How does he think he could get it do so quickly?

Not a bad way to "use" someone WRT the English teacher, maybe something in this, just say it is some "homework" Jessica is looking into.  Anyway everything is crossed here mate for a speedy application process.  Good luck Mike and Jessica.

You wife was right, ( ha ha aren't they all!) English teachers are a good resources. My wife's teacher helped me through our wedding ceremony. It was conducted in Mandarin and she managed to get me through the whole thing, telling me when to bow or a hundred other things it seemed I had to do. I will always be grateful for that as without her it could of all gone badly wrong at any moment. Plus the ceremony was recorded so I could have lived my mistakes over and over again. As it is there is a beautiful Chinese lady just to one side saying "bow three times" and the like! Congratulations on your 3 month anniversary and may the next 5 pass quickly....

Mike all I can say is patience.  She will have to learn to trust you.  There are to many armchair quarterbacks in China.  You'll get past it.  Read about what David E said on this thread.

Mike you are further ahead in your journey than I am.  I have thought about these things and one thing I have said to myself, is just take it one step at a time.  In the end, you will get there.  There will be bumps in the road, just travel over them.  Shaun is right, "patience", this is one of those times you need it.
